Soil : Stony soil of Limestone, clay and silica
Site : Chanson is one of the major owners of Clos des Mouches with a vineyard of 4.5 hectares. A sunny Terroir which benefits from an ideal location on the hill at the southern end of the vineyards of Beaune on a spur pointing toward Pommard . A plot of 2 hectares on the upper side of the hill is planted with Chardonnay on a limestone subsoil covered with sand.
The Vintage 2017 : After a classic winter, spring settled down with warm températures but a cool weather in April slackened down the evolution of the vines. May was rainy and was followed by a warm summer with heat waves. However, a few thunderstorms épisodes brought enough rain to allow the maturation of the grapes to continue. The harvest started early september with an excellent sanitary level of the grapes. Vinification : after a mild pressing, this wine was vinified and aged for 10 to 14 months in oak casks in our cellars of the XVth century. Moderate proportion of new oak.
Tasting : Gold colour. Subtle floral fragrances mixed with pretty and fresh aromas of pale fleshed fruit mixed with citrus fruit aromas on a hint of minerality. Fleshy and ample on a sappy and tight texture. Deep and long finish with mineral tinges. Score : 90 - Burghound
Food pairing : To be enjoyed with seafood and certain cheeses like Comté or Citeaux.
