Grape Variety : Pinot Noir
Soil : Marl, chalk and limestone.
Site : Named after the latin "Dominus", "Vineyard of the Lord" an indication that this area was formerly owned by the Lord of Savigny. This vineyard is North East oriented on mid-slope.
The Vintage 2002 : The harvest took place at the end of September, several days after the official beginning of the harvest in order to obtain the best possible maturation of the berries. Excellent weather conditions prevailed in August and September and hence the good quality of the grapes. A severe pruning had been carried out to limit yields. Aging in oak casks during 18 months.
Tasting : Ruby colour with purple tinges. Aromas of red fruit (raspberry) mixed with vanilla. This wine has a good lively fruit underlined by beautiful oak note. Well-balanced, concentrated, good tannic structure.
Food pairing : To be enjoyed with red meat grilled or en sauce and all sorts of cheeses.
