Site : Chanson owns 3 ha in this climat located in the Premiers Crus area of Santenay, small village in the South of the Côte de Beaune. The plot is at the top of the hill and is positioned on two levels. The large proportion of stones gives to the wine a very special minerality which emphasizes the typicality of the Pinot Noir.

The Vintage 2007 : If there is a vintage in which Pinot Noir most fully expresses itself, it is in 2007. The dry North wind which prevailed in September gave rise to an exceptional phenolic ripeness, a deep purple colour, beautiful crunchy flesh and an explosion of red fruits marvelously combined with the minerality of the terroirs. Aged in French oak during 14 months.

Tasting : Dark ruby colour. Intense aromas of fresh red fruit (raspberry, red berry) mixed with chocolate and a delicate vanilla note. Well-balanced and generous. Very pure aromatic combination of red fruit. Subtle minerality. Fine grained tannins. Long and refreshing aftertaste.

Food pairing : To be enjoyed with roast meat or stew dishes as well as moderately nature cheeses.
