Site : In the south of the Côte de Beaune, the terroirs of Puligny Montrachet produces some of the greatest white Burgundies, including the famous Grand Cu Montrachet. The grapes vinified by Chanson are sourced from excellent plots of vineyards on mid-slope.
The Vintage 2004 : Harvest took place at the end of September after a cool and humid Summer with short periods of very hot weather. The "tri", sorting of the grapes was drastic to keep only the very ripe berries. The combination of strictly controlled yields, a good acidity and a meticulous vinification process results in a great vintage for white Burgundy. Aging in oak during 13 months
Tasting : Pale gold colour. Floral fragrances mixed with citrus fruit aromas enhanced by a beautiful minerality and a delicate oak note. Generous, well-balanced and well-structured. It develops an array of aromas with a well-integrated minerality. Good persistence.
Food pairing : Seafood, fish, mild cheeses as well as certain goat cheeses.
