Grape Variety : Chardonnay
Soil : Mix of limestone and clay.
Site : Four different plots of vineyards from selected "vignerons". Two are located on mid slope for finesse and minerality, the two others are situated around the village for more richness and depth.
The Vintage 2001 : Harvest took place at the end of September after a late Summer. It was as a whole homogeneous but the "tri", sorting of the grapes was drastic to keep only the very ripe berries. Vinified by Chanson and aging in cask during 10 months
Tasting : Pale gold colour with green tinges. Pungent bouquet of almond and pale fleshed fruit (peach) enhanced by a hint of vanilla. Elegant, charming, good follow-through of fresh almonds mixed with spiciness. Well-structured, complex, full-bodied with a good persistence.
Food pairing : To be enjoyed with "foie gras", grilled fish, white meat and strong cheeses (especially Epoisses, Roquefort and Munster).
