Site : In the northern part of village of Chassagne Montrachet. It is one of the most famous Grands Crus Chardonnay in Burgundy. It is located on a mid slope facing east, aside the famous Batard Montrachet.
The Vintage 2004 : Harvest took place at the end of September after a cool and humid Summer with short periods of very hot weather. The "tri", sorting of the grapes was drastic to keep only the very ripe berries. The combination of strictly controlled yields, a good acidity and a meticulous vinification process results in a great vintage for white Burgundy. Aging in casks during 16 months
Tasting : Pale colour with emerald tinges. Beautiful floral fragrances (acacia) mixed with green almond and citrus fruit underlined by an outstanding minerality and beautiful vanilla note. Elegant, well-balanced and powerful. Beautiful aromatic complexity and beautiful substance underlined by a well-structured minerality. Outstanding persistence.
Food pairing : Seafood, "foie gras”, fish in a creamy sauce, crayfish. Particularly great with a selection of French cheeses.
