Site : Selected plots of vineyards in the villages of the Côte de Beaune, mostly Pernand-Vergelesses, Auxey-Duresses and Ladoix.
The Vintage 2000 : After a quick bud burst, followed by an early flowering period (beginning of June), some rain and cool temperatures in July slowed down the ripening of the grapes. Good weather at the end of the summer and a prolonged hot period in early September, which ensured good concentration of the juice. Aging in cask during 12 months
Tasting : Ruby colour. Aromas of red berries and chocolate enhanced by delicate vanilla notes. Very appealing. Aromatic combination of candied cherries enhanced by an elegant oak note. Harmonious, supple, good tannic structure and good persistance.
Food pairing : To be enjoyed with warm starters, white meat, matured cheeses.
