Grape Variety : chardonnay

Soil : Limestone, clay and silica

Site : Chanson is one of the major owners of Clos des Mouches with a vineyard of 4.5 hectares. Ideal location on the hill at the southern end of the vineyards of Beaune on a spur pointing toward Pommard . A plot of 2 hectares on the upper side of the hill is planted with Chardonnay on a limestone subsoil covered with sand.

The Vintage 2005 : Harvest took place in the early days of September after a dry and very hot summer after a superb growing season - long and cold winter followed by a rainy and humid spring. Exceptional weather conditions for an exceptional vintage. Full maturation of the grapes and good concentration. Aging in cask during 13 months

Tasting : Beautiful gold colour. Intense aromas of ripe summer fruit (peach) and exotic fruit (mango) mixed with honey and enhanced by a subdued minerality and a well-integrated vanilla note. Well-balanced, generous with a lot of breed. Beautiful aromatic complexity underlined by a well-integrated minerality and very refined oak note. Outstanding persistence.

Food pairing : To be enjoyed with "foie gras", seafood and goat's cheese. Champion White Wine International Wine Challenge 2007
