Grape Variety : Chardonnay

Soil : Limestone, clay and silica

Site : Chanson is one of the major owners of Clos des Mouches with a vineyard of 4.5 hectares. Ideal location on the hill at the southern end of the vineyards of Beaune on a spur pointing toward Pommard . A plot of 2 hectares on the upper side of the hill is planted with Chardonnay on a limestone subsoil covered with sand.

The Vintage 2003 : An exceptionally early harvest end of August due to an outstanding hot summer. Grapes were extremely well mature with high concentration. Very low yields. Grapes had to be cooled down before pressing.

Tasting : Pale colour with emerald tinges. Intense aromas of summer fruit (peach, apricot) mixed with exotic fruit and underlined by a hint of vanilla. Generous, full-bodied, beautiful aromatic combination of fresh fruit enhanced by a subtle oak note. Well-structured, concentrated with a good persistence.

Food pairing : To be enjoyed with "foie gras", seafood and goat's cheese. Gold medal - Concours Général Agricole - Paris 2005
