Grape Variety : Chardonnay

Soil : Limestone, clay and silica

Site : Chanson is one of the major owners of Clos des Mouches with a vineyard of 4.5 hectares. Ideal location on the hill at the southern end of the vineyards of Beaune on a spur pointing toward Pommard . A plot of 2 hectares on the upper side of the hill is planted with Chardonnay on a limestone subsoil covered with sand.

The Vintage 2000 : After a quick bud burst, followed by an early flowering period (beginning of June), some rain and cool temperatures in July slowed down the ripening of the grapes. Good weather at the end of the summer and a prolonged hot period in early September, which ensured good concentration of the juice. Aging in cask during 12 months.

Tasting : Beautiful gold colour. Intense aromas of exotic fruit (mango) and citrus fruit (grapefruit) mixed with toasted almonds and enhanced by a beautiful vanilla note. Ample, generous, harmonious, well-balanced and well-structured. Beautiful aromatic combination. Long aftertaste. Gold medal Concours Général Agricole Paris 2002

Food pairing : To be enjoyed with "foie gras", seafood and goat's cheese.
