Grape Variety : Chardonnay

Site : Chablis is in the Northern part of the Burgundy region. The "Premier Cru Montmains" is located South of the Commune of Chablis and is one of the more famous Premier Crus. Two particularly well-situated plots have been selected for the blend.
The Vintage 2011 : After a very cold winter and a demanding spring, the hot summer was regularly interrupted by rainy intervals which early September gave way to a bright and warm weather, that speeded up the maturation of the grapes. Harvest began in the last days of September under a bright sunshine. Careful vinfications and aging have helped to tame the outstanding acidity of the Chardonnays. Aging in oak (demi-muids)
Tasting : Bright gold colour. Very pure aromas of citrus fruit and fresh hazelnut. Delicate vanilla note. Beautiful mineral expression. Tense and linear. Well-balanced. Precise and straightforward. Well-shaped acidity. Beautiful minerality on the finish.
Food pairing : Pâté, seascallop, turbot, poularde in a creamy sauce as well as many goat cheeses.
