Site : Chablis is in the Northern part of the Burgundy region. The "Premier Cru Montmains" is located South of the Commune of Chablis and is one of the more famous Premier Crus. Two particularly well-situated plots have been selected for the blend.

The Vintage 2008 : After a very warm spring, the weather at the start of summer was quite demanding. It became fine again from the end of August with much sun and a north wind, which aided concentration of flavours. The harvest commenced in mid-September in perfect conditions under an Indian summer. Careful selection of grapes in the vineyard and winery has produced very pure white wines, well-balanced with fantastic acidity. Aged in demi-muids during 8 months.

Tasting : Pale gold colour with emerald tinges. Refreshing floral fragrances mixed with citrus fruit. Delicate vanilla note and beautiful minerality. Well-balanced and linear. Fresh acidity and tight long mineral finish with plenty of citrus fruit.

Food pairing : Pâté, seascallop, turbot, poularde in a creamy sauce as well as many goat cheeses.
