Chablis Premier Cru Fourchaumes 2011

Chablis Fourchaumes
1er Cru 2011

Grape Variety : Chardonnay

Soil : Limestone

Site : This Premier Cru of Chablis is located at the northern border of the Grands Crus area on the right side of the Serein River.

The Vintage 2011 : After a very cold winter and a demanding spring, the hot summer was regularly interrupted by rainy intervals which early September gave way to a bright and warm weather, that speeded up the maturation of the grapes. Harvest began in the last days of September under a bright sunshine. Careful vinfications and aging have helped to tame the outstanding acidity of the Chardonnays. Aging in oak (demi-muids) during 8 months.

Tasting : Pale gold colour. Refreshing aromas of citrus fruit mixed with green almond on a hint of vanilla. Delicate minerality. Tight, crisp and well-balanced. Very pure fruit. Well-shaped minerality and well-integrated acidity. Long and generous finish.

Food pairing : Pâté, seascallop, turbot, poularde in a creamy sauce as well as many goat cheeses.
