Site : "Les Clos" is one of the most famous Grands Crus of Chablis. The area of production covers 24.75 ha. The vines selected by Chanson are ideally located right in the heart of the plot. The upper part of the plot brings the minerality and the lower part with alluvion deposits gives the rich character of this wine.
The Vintage 2008 : After a very warm spring, the weather at the start of summer was quite demanding. It became fine again from the end of August with much sun and a north wind, which aided concentration of flavours. The harvest commenced in mid-September in perfect conditions under an Indian summer. Careful selection of grapes in the vineyard and winery has produced very pure white wines, well-balanced with fantastic acidity. Aging in oak "demi-muids" during 10 months
Tasting : Pale gold colour. Refreshing floral fragrances mixed with aromas of fresh honey and peach. Subtle vanilla note and refined minerality. Generous and dense. Beautiful texture. Deep and tense. Complex and well-integrated minerality. Long and refreshing aftertaste.
Food pairing : Foie gras, shellfish, fish, white meat as well as some goat cheeses.
