Site : "Les Clos" is one of the most famous Grands Crus of Chablis. The area of production covers 24.75 ha. The vines selected by Chanson are ideally located right in the heart of the plot. The upper part of the plot brings the minerality and the lower part with alluvion deposits gives the rich character of this wine.

The Vintage 2007 : After a very warm spring, the weather at the start of summer was quite demanding. It became fine again from the end of August with much sun and a north wind, which aided concentration of flavours. The harvest commenced in mid-September in perfect conditions under an Indian summer. Careful selection of grapes in the vineyard and winery with regular batonnage (stirring of the lees in the barrel) have produced very pure white wines, well-balanced with fantastic acidity. Aging in demi-muids cask during 11 months.

Tasting : Pale gold colour. Intense floral fragrances mixed with aromas of green apple, honey and vanilla enhanced by a very refined minerality. Generous, dense and complex. Dense Texture. Well-structured. Tense and lean. Beautiful aromatic combination. Well-integrated minerality. Outstanding persistence.

Food pairing : Foie gras, shellfish, fish, white meat as well as some goat cheeses.
