Site : "Les Clos" is one of the most famous Grands Crus of Chablis. The vineyard is located on exceptional "terroir" on the hill overlooking the village of Chablis
The Vintage 2004 : Harvest took place at the end of September after a cool and humid Summer with short periods of very hot weather. The "tri", sorting of the grapes was drastic to keep only the very ripe berries. The combination of strictly controlled yields, a good acidity and a meticulous vinification process results in a great vintage for white Burgundy. Aging in casks during 14 months
Tasting : Pale gold colour with green nuances. Refreshing floral fragrances and citrus fruit aromas enhanced by a very clean minerality and subtle vanilla notes. Elegant, well-structured and well-balanced. Intense aromatic complexity and good minerality. Very long finish.
Food pairing : Foie gras, shellfish, fish, white meat as well as some goat cheeses.
