Site : Plot-based selection on hills ideally located south of the village of Chablis.
The Vintage 2011 : After a very cold winter and a demanding spring, the hot summer was regularly interrupted by rainy intervals which early September gave way to a bright and warm weather, that speeded up the maturation of the grapes. Harvest began in the last days of September under a bright sunshine.
Tasting : Pale gold colour. Aromas of grape fruit mixed with floral fragrances on a delicate minerality. Pure. Linear and well-defined. Good structure. Beautiful aromatic combination. Refreshing mineral finish, straight and of good length.
Food pairing : Pâté, lobsters and poultry as well as some goat cheeses.
