Soil : Mix of limestone and clay.
Site : In the heart of the Premier Cru vineyards of Domaine Chanson, this plot covers 4 hectares in the center of the Beaune territory.
The Vintage 2004 : Harvest took place at the end of September after a cool and humid Summer with short periods of very hot weather. The "tri", sorting of the grapes was drastic to keep only the very ripe berries. The combination of strictly controlled yields and a meticulous vinification process played a major part in the quality of the vintage. Aging in casks during 14 months
Tasting : Bright ruby with purple tinges. Intense aromas of red berries (raspberry ans red berry) mixed with chocolate and a toasted bread note enhanced by a touch of vanilla. Well-balanced, generous and silky. Beautiful aromatic combination. Smooth tannins and delicate oak note. Long aftertaste.
Food pairing : Enjoy with red or white meat, "Boeuf Bourguignon" and variety of regional cheeses, in particular goat's cheese and Citeaux.
