Grape Variety : Pinot Noir

Soil : Mix of limestone and clay.

Site : In the heart of the Premier Cru vineyards of Domaine Chanson, this plot covers 4 hectares in the center of the Beaune territory.

The Vintage 2003 : An exceptionally early harvest end of August due to an outstanding hot summer. Grapes were extremely well mature with high concentration. Very low yields. Grapes had to be cooled down before pressing. Aging in oak casks during 14 months.

Tasting : Bright ruby with purple tinges. Intense aromas of preserved plum mixed with chocolate and a hint of vanilla. Concentrated and generous. Good aromatic combination. Elegant oak note and good layer of tannins. Long aftertaste.

Food pairing : Enjoy with red or white meat, "Boeuf Bourguignon" and variety of regional cheeses, in particular goat's cheese and Citeaux.
