Grape Variety : Pinot Noir
Soil : Mix of limestone and clay.
Site : In the heart of the Premier Cru vineyards of Domaine Chanson, this plot covers 4 hectares in the center of the Beaune territory.
The Vintage 2001 : Harvest took place at the end of September after a late Summer. It was as a whole homogeneous but the "tri", sorting of the grapes was drastic to keep only the very ripe berries. Aging in oak cask during 18 months.
Tasting : Bright ruby red. Pungent bouquet of violets and red berries mixed with subtle hint of spiciness. There is a good follow-through of the fruit onto the palate enhanced by subtle oak nuances. The wine is concentrated, well-balanced and well-structured with an elegant tannic structure. It has a long and lingering aftertaste.
Food pairing : Enjoy with red or white meat, "Boeuf Bourguignon" and variety of regional cheeses, in particular goat's cheese and Citeaux.
