The Vintage 2001 : Harvest took place at the end of september after a late Summer. It was as a whole homogeneous but the "tri", sorting of the grapes was drastic to keep only the very ripe berries. Aging in cask during 12 months
Tasting : Intense ruby red with purple nuances. Aromas of strawberry and cherry enhanced by a hint of vanilla. This wine has breed and class. It develops a beautiful aromatic combination of red fruit. It is well-balanced, full-bodied, with an elegant oak note, enhanced by fine tannins.
Food pairing : Poultry, game, grilled meat as well as all the local cheeses (Epoisses, Langres...)
